My favorite dessert - Banana Smoothie with flax seed

This is super easy to make and it's so good!



Honestly, when I first decided to start eating healthy, I thought I was going to really miss ice cream. I always loved desserts especially ice cream. I used to eat banana splits for lunch because I loved it so much. I was a big fan of Haagen-Dazs ice cream. I had no problem finishing the whole pint in one sitting, and I especially liked those vanilla and almond Haagen-Dazs ice cream bars.


I also loved candy bars and chocolate. My favorite candy bar growing up was Snicker's bar and Hershey's chocolate with almonds. It wasn't long ago that I would sit down and have 2 scoop chocolate ice cream sundae with my family. I used to actually make homemade fudge for our sundaes. We would drizzle our Haagen-Dazs vanilla ice cream with homemade fudge and add almonds, diced heath bars and whipped cream.


So, when I decided to stop eating all animal products including dairy, I had to give up ice cream. I did try some of those non-dairy ice creams and found that they weren't the same. Besides, I wasn't just trying to eliminate dairy but also wanted to cut out refined sugar and just stick to natural sugar.


Even though I miss it sometimes, it hasn't really been that hard. I have acquired a true love for fresh fruit and their natural sweetness so it's been pretty easy giving up sweet desserts. Besides, I have found other easy ways to fulfill those cravings so I no longer feel like I'm missing out.


One of my favorite dessert recipe I have found is the Banana Almond milk Smoothie on nourish-and-fete.com. It's so easy and only need 5 ingredients and a blender to make it. It only takes 5 minutes! To me, it tastes just like ice cream maybe even better. Fresh bananas won't work so be sure to freeze the bananas ahead of time, at least 12 hours in advance and be sure to use ripe bananas. More ripe they are the better.


I used to cut the bananas in small pieces before freezing but if you do that, it's hard to gauge the amount when it calls for 1 or 2 whole bananas so now, I freeze them whole.


I use my own homemade almond milk but if you don't have time to make your own, you can substitute using store bought almond milk (unflavored and no sugar added) or any other soy milk. Honestly, I haven't tried making it with any other plant milk besides my own almond milk so I'm not sure how it'll turn out but it won't hurt to experiment.


Tip: In order to prevent the bananas from sticking together when storing, peel and lay them out on a tray so they don't touch each other. Freeze them overnight and then transfer them over to a freezer bag or a container for storage.


Serving size: 2 cups


Ingredients


  • 1 cup of almond milk (no sugar added)

  • 2 medium size frozen bananas ( you can cut them into smaller pieces before blending if you like)

  • 1 Tbs flax seeds

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

For chocolate flavor, add 1 Tbs of cocoa powder


Instruction


  1. Combine all ingredients in a blender

  2. Blend until thick and smooth or for about 1 minute

  3. Pour into a cup and enjoy!
